High Steaks Vegas: the Rio's 50th-floor steakhouse
The heir to VooDoo Steak
Since 1997, the top level of the Rio's Masquerade Tower had been home to VooDoo Steak. In June 2025, the hotel announced it would be replaced by a new concept entrusted to James Trees, a Las Vegas-born chef, James Beard Award finalist and owner of Esther's Kitchen in the Arts District. High Steaks Vegas opened in fall 2025 in the same room, whose picture windows offer a 180° view of the Strip, from the Bellagio to the High Roller, and of the valley all the way to the mountains.
Ranch meats, game and seafood towers
The menu modernizes the classic steakhouse. On the meat side: smoked prime rib ($59 or $72), bison filet ($72), New Zealand elk chop and a 40-ounce tomahawk at $245. From the sea: platters of lobster, shrimp and oysters, Ora King salmon or a whole grilled sea bass. To start, game tartare, crab cakes or pastrami-style glazed bacon; on the side, creamed spinach with basil or crab gratin. Wines by the glass range from $13 to $35, and a long bottle list rounds out the meal.
