SUSHISAMBA Dubai: dinner 230 metres above the Palm
A sky lounge at the top of The Palm Tower
Two lifts take you up to the 51st floor of The Palm Tower, the tower that houses The St. Regis Dubai, The Palm hotel, 230 metres up. SUSHISAMBA occupies a vast, fully glazed space there: there is no open-air terrace, but the floor-to-ceiling windows reveal a 360° panorama over the Palm Jumeirah coastline, the Arabian Gulf, the Ain Dubai wheel and the Dubai skyline. At sunset, golden light floods the whole room.
The décor is dominated by a huge 3D-printed wooden installation running across the ceiling, inspired by Japanese and Brazilian weaving techniques; the lighting is designed to limit reflections on the windows. At the centre, the open kitchen showcases the robata grill and the sushi counter.
Japan, Brazil and Peru at the same table
The menu brings together the house's three culinary cultures: sushi and maki, seviches, anticuchos, meat, fish and vegetables grilled on the robata, served as small plates to share. The bar offers a cocktail list, and a “Vivo” lunch menu is served from Sunday to Friday.
For special occasions
With its different spaces, from the bar to the main dining room, SUSHISAMBA also hosts private dinners, receptions and corporate events, and runs workshops on sushi, seviche and sake.
