A pool on top of a medieval palazzo
The Grand Hotel Minerva occupies a 13th-century palazzo on Piazza Santa Maria Novella, very close to the marble façade of the basilica. Its roof is home to a heated panoramic pool, surrounded by sofas, sun loungers and lounge areas served by the bar. The pool is reserved for hotel guests, from 9am to 7pm; in the evening, the rooftop cocktail bar welcomes everyone, Florentines and travellers alike.

The view sweeps around the city and its monuments, from Piazza Santa Maria Novella just below to the Duomo and the hills surrounding Florence. People come above all to see the Duomo as the sun goes down.
Four-elements cocktails and pizzas
The house's signature cocktail is the Terrace Negroni (€20), made with vermouth from Prato. The menu is built around the four elements, air, fire, water and earth, with creations from €18 to €25: a Mediterraneo Spritz with basil, a Raspberry Fizz with champagne, a Medici Mule. Gin and tonics cost €20 or €22, beer €15 and alcohol-free cocktails €18. Aperitivo is served until 10.30pm, with a platter of cold cuts and cheeses (€25) or hummus with crudités (€18), and the oven turns out €30 pizzas: margherita with buffalo mozzarella, pizza bianca with Tuscan prosciutto, spicy salami.
Practical information
The rooftop operates in season, from spring to early autumn; exact dates vary. For outside visitors, the bar is open every evening from 7.30pm to midnight, without access to the pool.
