Hyde Park House occupies a corner building on William Street, on the edge of Darlinghurst, a few streets from Hyde Park. Past a public bar on the ground floor and two levels of bars, a narrow staircase leads up to Slims, a rooftop terrace with Palm Springs-inspired decor: chequerboard floor, low pink walls, potted cacti and palms, frilled umbrellas. The building isn't very tall, but nothing blocks the view to the west: the Art Deco facades of William Street, the city-centre towers and Sydney Tower, with the setting sun straight ahead.
Margaritas, pizzas and weekend brunch
Slims bills itself as a bar more than a restaurant. Cocktails are around A$25, including a range of margaritas made with Patrón tequila (classic, spicy, passionfruit, coconut, Tommy's), and the kitchen turns out stone-baked pizzas, burgers, pasta and sharing plates. On weekdays, A$25 lunch deals include a drink. On Saturdays and Sundays, the Slims Brunch Club offers 90 minutes of bottomless drinks with a sharing menu, bookings required. At weekends, DJs keep the mood festive; early in the week is quieter and better suited to a meal.

Open daily for lunch and dinner; exact rooftop hours aren't published (the venue opens from 10am to 3am Monday to Saturday, and from 10am to 10pm on Sunday). Online bookings for groups of up to 30, with a pre-authorisation or minimum spend; walk-ins can usually find a spot on weekdays. Over-18s only; no bucks or hens parties and no fancy dress.
